Lemon-Parmesan Zucchini Noodles

Make a bowl of zucchini noodles instead of pasta! This dish combines spiralized "zoodles" with Parmesan cheese, lemon, olive oil and crunchy nuts to make a satisfying and naturally gluten-free dish.

What you need

cup extra-virgin olive oil

kosher salt

tsp granulated garlic

tbsp lemon juice

tsp lemon zest
cup walnut

tsp red pepper flake
cup thyme leaves
cup grated parmesan cheese
Instructions
0 Trim the ends of the zucchini and cut into noodles, ribbons or matchsticks with a knife, spiralizer or vegetable peeler. 1 Put the zucchini in a large bowl and pour the olive oil over. Toss gently to coat the strands, then season with salt to taste (I usually add 1/2 -1 teaspoon). 2 Add the garlic, lemon juice, zest, walnuts, and chili flakes and toss again. 3 Top the bowl with the herbs and sprinkle the Parmesan cheese over the top.View original recipe
