Italian Summer Country Cake

What you need

cup all purpose flour

tsp baking powder

tsp salt

cup milk

tbsp salted butter

tsp vanilla extract
lemon zest
egg

cup sugar

pt berry mix

nectarine

powdered sugar
Instructions
0 Preheat oven to 425 (220 C) degrees. Butter and flour an 8 or 10-inch tube or fluted cake pan. 1 Whisk the flour, baking powder and salt together in a large bowl. 2 Pour the milk in a large measuring cup and stir in the butter, vanilla and lemon zest. 3 Beat the eggs with an electric mixer, gradually adding the sugar until thickened and pale. 4 Stir in the flour mixture into the eggs in 2 additions, alternating with the milk mixture, just until the batter comes together. 5 Scrape the batter into the pan. Bake 15 minutes, then lower the oven to 350 degrees. Bake for another 15 minutes, or until the cake feels springy to the touch and a toothpick inserted into the middle comes out clean. 6 Cool 5 minutes in the pan, then invert onto a rack and cool completely. To Serve 7 Gently combine berries and fruit in a bowl with a teaspoon or two of sugar. 10 To serve the cake, dust with powdered sugar. Pour the fruit mixture into the center of the cake and all around the cake plate. Serve slices with some fruit on the side.View original recipe
