Preheat oven to 425 (220C) degrees. Slice each apple into 1/2-inch wedges — you should have a generous 4 cups. Stir the butter, sugar, spices, cornstarch salt and vanilla together in a bowl. Toss the apples with the butter mixture and transfer to a shallow baking dish. Roast the apples about 20-25 minutes, until they soften and juices are caramelized and bubbling. Let cool 5 minutes. Serve the apples warm over softly whipped cream on the side.
